I Play in My Kitchen



I go to bed with a certain level of excitement for the adventures of cooking to come from the kitchen the next day. To me, it's about creating something, and finally having the space and freedom to change raw ingredients into something completely new.

I like to plan things, and so, laying awake in bed I have a mind whirling with possiblities, and organising my ideas into neat little boxes:

things to do tomorrow

ideas for recipes

ideas for crafts

And the most interesting of all,


conversations, a whirl of would-be scenarios that fill up my mind with unnecessary clutter and keep me from falling asleep usually. 

I think up recipes and dream of pulling something steaming from the oven. I think up smells and tastes, the concoctions of spices and notes of fruits and vegetables mixing together to form a mouthwatering aroma. Interestingly enough, I still never quite know what each dream of cooking actually ends up being, and the surprise awaits until the morning, when I finally get my hands back on a mixing spoon and fresh ingredients, with the music playing out loud. Luckily, I'm usually the last one up after the neighbours have already awoken and left for the day. Summers are good that way.

So, I play in my kitchen, dance to the steps of a recipe as it is choreographed to the music being belted out, and finally I adventure into a new world of smells - I am the one who is following an unknown trail, and often I become lost to find something new and exciting.

Exploring the woods is a bit like that too, so my sense of adventure and the thrill of finding the perfect hideout spot of new viewpoint goes hand in hand while I'm set on cooking something fresh and delicious.

Mediterranean Avocado Flat Bread

Avocado can be used to replace oil or butter in any recipe, and also adds its own unique flavor to any dish. Paired with chia seeds in this flat bread, it's a delicious alternative to plain bread, which can be served with or without toppings - a twist on pizza as well if you like!

Try your own toppings as well, as if it were a pizza, and taste the difference in this healthy and tasty quick bread, or try it plain to detect the delicious flavors of fresh avocados. Can easily be made dairy free. 

{Makes one large flat bread}

{Ingredients:}

1/2 cup warm water
2 tablespoons chia seeds

1 large avocado
1 teaspoon apple cider vinegar 
1 egg

1/2 cup potato flour
3/4 cup tapioca flour
1 teaspoon baking soda

coarsely ground salt

6 to 10 cherry tomatoes, halved lengthwise
3 tablespoons crumbled goat's cheese feta
2 tablespoons extra virgin olive oil

{Directions:}

Preheat the oven to 425°F and line a baking sheet with parchment paper. Set aside.

In a small bowl, combine the warm water and chia seeds, stirring briefly before setting aside.

Using a small blender or food processor, pulse the avocado and apple cider vinegar until smooth. Add in the beaten egg and stir together. 

Next fold in the flours and baking soda until the mixture is moist but not sticky. {Add more potato flour if this happens, or water, 1 tablespoon at a time, if it doesn't come together}

Flatten the mixture onto the baking sheet, and use a rolling pin over another piece of parchment to roll the dough out into a large rectangle about 1/4 inch thick. Generously too with coarsely ground salt. 

Bake for 10 minutes before adding chopped cherry tomatoes and goat's feta toppings, drizzling extra virgin olive oil across the flat bread. Bake an additional 10 to 15 minutes, or until the edges begin to brown slightly. 

Serve with balsamic vinegar to dip. 

With leftovers, lightly toast the flat bread in a hot oven to reheat. Without toppings, the flat bread can be used like any other bread: try a grilled cheese, or sweeten it with a bit of honey.
